Tiramisu Recipe

Here's a classic recipe for tiramisu:

Ingredients:

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup whole milk
  • 1 1/4 cups heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 pound mascarpone cheese
  • 2 cups brewed espresso or strong coffee, cooled
  • 1/4 cup rum or Marsala wine
  • 24-30 ladyfingers
  • Cocoa powder, for dusting

Directions:

  1. In a heatproof bowl, whisk together the egg yolks and sugar until well combined. Place the bowl over a saucepan of simmering water and whisk constantly until the mixture thickens and turns pale yellow, about 5-7 minutes.
  2. Remove the bowl from the heat and whisk in the milk until smooth. Allow the mixture to cool to room temperature.
  3. In a separate large bowl, beat the heavy cream and vanilla extract together until soft peaks form.
  4. Add the mascarpone cheese to the cooled egg mixture and whisk until smooth. Gently fold in the whipped cream until well combined.
  5. In a shallow dish, combine the espresso or coffee and rum or Marsala wine.
  6. Dip each ladyfinger into the coffee mixture for a few seconds, until completely soaked. Place the soaked ladyfingers in a single layer in the bottom of a 9x13 inch dish.
  7. Spread half of the mascarpone mixture evenly over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight.
  9. Before serving, dust the top with cocoa powder. Cut into squares and enjoy!

Note: Tiramisu is traditionally made with raw eggs. If you are concerned about the risk of foodborne illness, you can use pasteurized eggs or egg substitute products instead.
